XMPP chat room logger

I was wondering how I would go about getting something for my server that would login to a XMPP server, join a chat room, and just sit there and log all the chat and then save it on my server on the respective folder named that the chat happened happened.

Is this feasible at all? How would I go about this? I've searched google and found a bunch of stuff but nothing seems to really work.
